With an impressive gastronomic career and experience in first-class restaurants such as the Schwarzwaldstube in Baiersbronn, einsunternull in Berlin or most recently the three Michelin-starred Maaemo in Oslo, Rosina Ostler brings a new perspective and her own culinary approach to Munich in our Restaurant Alois.
After completing her training, she initially stayed in Baiersbronn and worked at the three-star Schwarzwaldstube restaurant under the management of Torsten Michel before moving to Berlin in 2019 to work at the einsunternull restaurant.
She then wanted to gain experience in Nordic cuisine and decided to work at the Maaemo restaurant in Oslo. During her stay there, Rosina Ostler also opened the fine dining restaurant Mon Oncle (by Maaemo AS) with an à la carte concept as head chef. Most recently, the 31-year-old worked as Chef de Cuisine at the three-star restaurant Maaemo in Oslo under the kitchen direction of Esben Holmboe Bang.
Since December 2023, the Munich-born chef has been back in her home town - as the new head chef of the Alois Dallmayr Fine Dining Restaurant. Her passion for high-quality ingredients, courage to create bold flavors and a keen sense for exciting combinations promise guests an unforgettable culinary experience.

Julien Morlat will continue to manage the service at Alois. Julien Morlat, long-time restaurant manager and sommelier, will continue to be the host at Alois and will be responsible for both wine selection and advising guests on wines.
In the kitchen, Rosina Ostler can work with a young team of chefs who bring with them a wealth of experience from top international gastronomy. They have already gained experience in France, Switzerland, Portugal, Norway, Austria and many other countries, which can now be found on the plates at Alois.
