Coffee has always been a tradition at Dallmayr – until the 1950s, we even had our own in-house roastery in Munich.
Now, this craft is making a comeback: With our new small-batch roaster at Dallmayr Delicatessen in Munich, we are bringing the art of coffee roasting directly to you.

Experience firsthand how raw coffee beans transform into a fragrant masterpiece through traditional drum roasting. The same beans can produce a fruity, aromatic filter coffee or a strong, bold espresso, depending on the roasting level and temperature.
Fascinating: All it takes is dry heat, perfect beans, and the skill of the roaster. At Dallmayr Delicatessen in Munich, you can witness the entire process up close – from raw coffee to the final roasted bean.
The Roasting Process
How Does the Aroma Unfold?
In the drum roaster, the coffee beans are gently roasted for an extended period in a slowly rotating drum. The drum is externally heated, ensuring that the coffee is roasted evenly both through the contact between the beans and the drum wall, as well as through the heat inside the drum. This gentle roasting method allows the coffee's rich, complex flavors to develop and unfold gradually, creating a perfectly balanced cup.

1. Maillard Reaction
The Maillard reaction is essential for creating an aromatic cup of coffee. It begins at around 150°C during roasting, where sugars and amino acids react to form hundreds of aromatic compounds. This reaction is crucial for developing roasting flavors, sweetness, and complexity in the coffee.

2. First Crack
At about 190°C, the beans begin to crack audibly – they expand under pressure, doubling in size. This is a crucial moment for the roaster, where the perfect flavor profile is created. Right after the first crack, the beans reach a roast level ideal for our beloved filter coffee.

3. Second Crack
About 15 minutes later, the second crack occurs, a gentle crackling sound that introduces deeper roasting flavors. Around this stage, the perfect roast for a bold espresso is achieved.
In-House Roasts
Each day, two exclusive in-house roasts are created on-site: Espresso and Omni Roast. Enjoy them freshly brewed at the Coffee Club or take your favorite roast home from the coffee department or the Coffee Club.

Our goal is to share our coffee know-how and the culture surrounding coffee with our guests in a more immersive way.
