In the Dallmayr building on Dienerstrasse, there are a total of 70 chefs working in a wide variety of departments – in the production kitchen, they produce the delicacies for the Catering division, for sale in the shop and the Lukullus Bar, are responsible for the dishes which are offered in the Café-Bistro, or work in the kitchen of the restaurant Alois.

There are many things that are important for really good chocolates, but these three are an absolute must: the quality of the basic ingredients, a special freshness and a passion for the product.

In the Dallmayr chocolate manufactory, particular attention is paid to the selection of the ingredients, the use of the correct recipe and the top-quality workmanship, so that the particularly delicate filled chocolates can really show what they are made of.

The Source of our Quality:
The crystal clear Waters off Scotland and Ireland.

Our Dallmayr salmon specialities are made exclusively from salmon reared in selected certified Irish and Scottish sea farms.
The currents are always strong in the Atlantic, and the water is extremely cool and high in oxygen.

The fish are therefore exposed to constant movement, which makes their flesh particularly firm and high-protein – and therefore probably the best in Europe!

Once caught, the salmon are stored on ice all the way to Germany, rather than frozen and defrosted again, which would impair the consistency of their flesh and the taste.
